Title: Pie Melon and Lemon Jam

Peel melon, discard seeds and dice or mince 2 kg of the flesh. Place in a large bowl.

Finely grate rind from lemons (1-1/2 tablespoons). Remove pith and seeds and tie in a muslin bag.

Add rind, lemon flesh (chopped) and water to the melon, add muslin bag and cover. Stand overnight.

Transfer all ingredients to a large pan, bring to boil and simmer covered for about 45 minutes. Discard bag of seeds.

Add sugar, stir without boling until sugar is dissolved. Boil uncovered without stirring for about 45 minutes or until jam jells. Makes about 8 cups.
